COUNTRY PORK CHOPS WITH GRAVY 
1 tbsp. vegetable oil
1 tsp. salt
2 tbsp. all purpose flour
8 pork chops, about 1/2 inch thick
1/4 tsp. black pepper
1 c. milk

Heat the oil in a 12 inch skillet over moderately high heat for about 1 minute. Add 4 of the pork chops and cook, uncovered, for 8 minutes on each side, or until done (when juices run clear when chops are pierced near the bone). cook remaining chops. Sprinkle the chops with 1/2 teaspoon salt and 1/8 teaspoon pepper. Pour off all but 2 teaspoons of drippings from the skillet. Reduce the heat, add flour and cook, stirring constantly, until light brown - about 2 minutes. Gradually stir in the milk and cook, stirring constantly, for 1 to 2 minutes or until smooth and thickened. Add remaining salt and pepper. Return chops to skillet in sauce and reheat briefly. Spoon the sauce over the chops and serve.
