PINEAPPLE LAYER CAKE | |
2 1/4 c. sugar 3/4 c. milk 3 1/4 c. plain flour Pinch of salt 2 tbsp. lemon 3/4 lb. butter 1 tsp. baking powder 6 eggs (save 2 whites for frosting) Cream butter, sugar and salt together. Add all 6 eggs at once. Mix until fluffy. Add flour and baking powder. Mix well, then add milk and flavoring. This makes three 9 inch layers. Bake at 400 degrees for 20 minutes. PINEAPPLE FILLING: 1 1/4 c. sugar 1 lg. can crushed pineapple 2 tbsp. plain flour 1 tbsp. butter Drain pineapple. Mix sugar and flour with juice. Cook over low heat until thick. Add butter and pineapple. Let cool and spread on cake. |
