MUSTARD RELISH 
1 qt. green tomatoes, sliced
1 qt. onions, sliced
1 qt. cucumbers, sliced
1 qt. cabbage, chopped

Mix well with pickling salt and water and let stand overnight. Drain off liquid.

6 c. vinegar
1 c. flour
3 c. sugar
4 tbsp. dry mustard
1/2 tsp. turmeric

Mix flour, sugar, mustard and turmeric with 1 cup vinegar to make smooth paste. Heat remaining vinegar to boiling and pour over the paste slowly while stirring. Put tomatoes, onions, cucumbers and cabbage in a large kettle. Pour the sauce over them. Heat to boiling, stirring constantly. When mixture begins to boil, put in jars and seal.

Delicious served with pinto or green beans.
