CRANBERRY-ORANGE NUT BREAD | |
4 c. flour 1 1/2 c. sugar 1 tbsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 eggs, beaten 1 1/2 c. orange juice 1/2 c. salad oil 2 c. cranberries, halved 1 c. chopped nuts 2 tsp. grated orange peel Blend together the dry ingredients in mixing bowl. Combine eggs, orange juice and salad oil; add to dry ingredients, stirring until just moistened. Stir in cranberries, nuts, and grated orange peel. Pour into 2 greased and lightly floured 9 x 5 x 3-inch loaf pans. Bake at 375 degrees for 55 to 60 minutes, or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack. Makes 2 loaves. |
