CRANBERRY - ORANGE - RAISIN NUT
BREAD
 
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 orange, grated skin only
2 tbsp. oil
1 egg, beaten
1 tsp. vanilla
1/2 c. chopped nuts
1/2 c. cranberries (fresh)
1 c. raisins

Sift the dry ingredients together and set aside. Grate the orange, skin only. Cut orange in half and squeeze out juice. Boil enough water to make 3/4 cup (this will include the juice from orange and 2 tablespoons oil).

Beat egg and vanilla. Fold in the nuts, cranberries and raisins. Grease and flour bread pan. Bake at 350 degrees for 1 hour. After cooked, wrap and refrigerate or freeze. Makes 1 loaf.
