CRANBERRY-ORANGE NUT BREAD 
4 tbsp. frozen orange juice concentrate
2 tbsp. butter
1 egg
1 c. sugar
1 c. cranberries, cut in half
1/2 c. walnuts, coarsely chopped
2 c. flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda

Add enough boiling water to orange juice concentrate to make 3/4 cup liquid. Add butter, stirring until butter is melted.

In another bowl, beat egg and sugar well and stir into the orange mixture. Add cranberries and walnuts. Sift together flour, salt, baking powder and baking soda. Stir into the mixture. Spoon into a buttered loaf pan (9x5 inch). Let stand for 20 minutes. Bake for 1 hour at 325 degrees.

Variation: Fill (2-3) small loaf pans 1/2 full. Let rest for 20 minutes and bake for about 30 minutes in 325 degree oven.
