RHUBARB CUSTARD PIE 
2 c. sliced rhubarb
1 1/2 c. sugar
3 beaten eggs
2 tbsp. cornstarch
Dash of nutmeg
1 crust pie shell, unbaked

Mix sugar and cornstarch. Add eggs. Then add rhubarb, nutmeg (and dash of salt if desired). Put in unbaked pie shell. Bake 45 minutes in 400 degree oven (or until knife stuck in center of pie comes out clean).
