“LOW FAT ALFREDO SAUCE” IS IN:

LOW FAT ALFREDO SAUCE 
1 tbsp. butter
1/4 cup all-purpose flour
1 tsp. salt
pinch nutmeg
3/4 cup grated Parmesan cheese
3 cups low fat milk
1/2 tsp. pepper
cooked fettuccine pasta

Melt butter in saucepan over medium heat. Add flour; cook, stirring, 1 minute. Whisk in milk, salt, pepper and nutmeg. Bring to a boil, whisking; reduce heat and simmer, stirring occasionally, for 5 minutes. Toss with Parmesan cheese and cooked fettuccine.

I doubled the recipe.. I took out the nutmeg sauteed the garlic with the butter through in the cheese with the sauce and my family couldn't even tell the difference. They loved it. Two thumbs up!

I used skim milk so I had to add 2 tbsp of cornstarch for this to thicken. This was an awesome lighter version!

This is awesome! I used a pinch of garlic powder instead of nutmeg and I added the parm to the sauce itself and it was perfect! We had it with linguine and blackened chicken. Yum! I cannot tell the difference between this and the cream, full-fat version. Thanks for this!

I added half the amount of nutmeg and also added garlic powder & parsley to taste - it's very good. Also, I used my salt & pepper grinders. It makes for some nice texture. Thank you!!

Pretty good! It did come out a little gloopy but I probably let it simmer a bit too long. I passed on the nutmeg and minced up 4 cloves of garlic and 2.5 ounces of diced prosciutto... sauteed them separately. I added the garlic to the Alfredo after it boiled and then tossed the prosciutto in at the last minute. It was delicious! My boyfriend loved it!

This sauce works beautifully with butternut squash ravioli (whether you buy it in the frozen food section or make it yourself) and the nutmeg ingredient is perfect with the squash filling! Great fall season pasta dish!

This recipe is much better if you use garlic powder, and add some parsley flakes. substituting with the garlic powder is a MUST.
