YUMMY EGG CASSEROLE 
1/2 c. onion, chopped
4 tbsp. butter
4 tbsp. flour
3 c. milk
2 c. Sharp cheese, shredded
10 eggs, hard cooked
3 c. potato chips, crushed
10 to 12 slices bacon, crisp & crumbled

Cook onion in butter until tender, not brown. Blend in flour; add milk. Cook, stirring constantly, until thick. Add cheese and stir until melted. In a 10 x 6 x 2-inch casserole, make layers of egg, cheese, sauce, potato chip crumbs and bacon. Repeat. Bake at 350 degrees for 30 minutes. May make the night before and refrigerate and bake the next day. Do not freeze.
