MEXICAN CASSEROLE 
1 lb. ground turkey or beef
1 onion, chopped
Tortilla chips, as needed
1 can (3 oz.) green chilis, chopped
1 can (8 oz.) enchilada sauce
1 can cream of mushroom soup
1 c. cheddar cheese, grated

Cook meat with onion in iron skillet until browned; set aside. Do not clean skillet. Place a thick layer of chips in bottom. Scoop meat mixture on top of chips. Place green chili layer on top of meat followed by layer of blended enchilada sauce and soup. Top with cheese. Bake at 350 degrees for 30 minutes.
