BARBECUED RIBS | |
4 lbs. loin back ribs 1/2 lemon, thinly sliced 1/2 lg. onion, thinly sliced Salt ribs and place the slabs bone side down on grill over slow coals. (Keep an eye on the fire; ribs tend to dry out and char.) Broil about 30 minutes; then turn meaty side down and leave briefly until nicely browned. Turn meat side up again and broil about 30 minutes longer. Brush meat side with sauce; peg on a few slices of lemon and onion with toothpicks. Continue to broil without turning about 30 minutes or until done. GAUCHO BARBECUE SAUCE: 1 c. catsup 1 tbsp. Worcestershire sauce 2 or 3 dashes Tabasco sauce 1 c. water 1/4 c. vinegar 1 tbsp. sugar 1 tsp. salt 1 tsp. celery seed Combine all ingredients. Simmer 30 minutes. Makes enough sauce for basting 4 pounds ribs. Good on chicken also. |
