QUICK SHRIMP SCAMPI 
1 pound Shrimp
1/4 C butter
1 T Sliced Green Onions or Dried Onions
1 or 2 cloves Garlic
1 T Lemon Juice
Dash of Salt
1/2 t Grated Lemon Rind
2 T Minced Parsley
1/4 t Hot Sauce

Peel and devein shrimp, set aside.

Combine butter and next four ingredients in a large skillet. Heat until bubbly. Reduce heat to medium and add shrimp. Cook stirring frequently about 5 minutes or until shrimp turn pink. Add lemon rind, parsley and hot sauce; toss lightly. Garnish with lemon slices and parsley. Serve immediately.
