Wipe enough medium sized cucumbers to nearly fill a 5 gallon crock jar or plastic bucket. 3 3/4 c. apple cider vinegar 1 2/3 tsp. alum (this may be omitted but keeps them firmer) 2 1/2 c. salt Put the vinegar, alum and salt in a bit kettle. Add enough cold water and stir until the ingredients dissolve. Pour this over cucumbers that have been placed in the crock jar. Add enough more cold water to completely cover the cucumbers. Put a large earthen dinner plate and a clean rock on top of the plate to keep the cucumbers below the water level. Then put a cover over the crock jar. The longer these are left in the water the saltier they get. |
