ZUCCHINI CHOCOLATE CAKE 
1/2 c. mayonnaise
2 eggs
1 tsp. vanilla
1/2 c. vegetable oil
1 3/4 c. sugar
1/2 c. sour milk (sour with 1 tsp. vinegar)
1/2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
4 heaping tbsp. cocoa
2 1/2 c. flour
2 c. grated zucchini

TOPPING:

1/2 c. sugar
1/2 c. coconut
1/2 c. chocolate chips
1/2 c. chopped nuts (opt.)

Mix wet ingredients together first. Then add dry ingredients and grated zucchini last. Stir together and mix well. Pour into greased 9"x13" cake pan. Then sprinkle 1/2 cup sugar for topping over cake batter next 1/2 cup coconut and next 1/2 cup chocolate chips then 1/2 cup chopped nuts if you choose to use them. Bake for 40 minutes in 350 degree oven.

I grate up zucchini when it is in season and freeze in 2 cup packages for cake and bread recipes.
