EASY FISH CROQUETTES 
2 c. flaked fish
1/4 c. evaporated milk
2 tsp. grated onion
1/2 tsp. salt
1 c. fine bread crumbs
1/2 c. evaporated milk
Shortening for frying

Combine fish, 1/4 cup evaporated milk, onion, salt and pepper to taste in bowl; mix well. Shape into 8 patties. Coat with bread crumbs. Dip into remaining cup evaporated milk; coat with bread crumbs. Brown on both sides in 1/8 inch hot shortening in skillet.

Canned tuna or salmon very good. Heat 1 can cream of celery soup plus 1 can milk for gravy with fish.
