MEAT CROQUETTES 
2 c. cooked chicken or other meat
1 c. meat stock
1 tbsp. fat, if lean meat
4 tbsp. flour
1 tsp. salt
1 tsp. pepper
1/2 tsp. chopped onion
2 lbs. fat for deep frying
2 eggs
1 c. finely sifted & dried bread crumbs

Make very thick sauce of liquid, fat and flour. Blend with well seasoned meat and condiments. Spread thinly on shallow pan to chill for easy handling. Then shape into cones, balls; dip in bread crumbs then in slightly beaten egg. Drain and repeat. Place in wire basket so they don't touch and fry in deep fat from 5 to 8 minutes or until golden brown. Drain on unglazed paper. May be reheated in moderate oven.
