ZUCCHINI BREAD 
4 eggs
2 1/2 c. sugar
1 1/2 c. oil
4 c. peeled, grated zucchini
3 1/2 c. self rising flour
2 1/2 tsp. cinnamon
1 1/2 tsp. vanilla
1 c. chopped nuts

Beat eggs with fork until light and fluffy. Add sugar, oil, vanilla and zucchini. Mix lightly but well. Add flour and cinnamon and mix until well blended. Stir in nuts. Pour into 2 greased 9 x 5 x 3 inch loaf pans. Bake at 350 degrees for 1 hour or until toothpick comes out clean when inserted in center of loaf.
