COCONUT CREAM PIES 
1 1/2 c. sugar
4 c. milk
1/2 c. flour
4 egg yolks
2 tsp. vanilla
14 to 16 oz. coconut
2 baked deep-dish pie crust

Mix sugar and flour. Beat egg yolks and add milk. Mix with dry ingredients. Cook over medium heat, stirring constantly until thick. Add vanilla and coconut, mixing well. Pour into baked pie crusts. Beat egg whites until stiff, adding 2 tablespoons sugar gradually. Add to top of pies and brown.
