OVEN - FRIED CHICKEN 
4 skinless boned chicken breasts
1/4 c. Dijon mustard
2 tbsp. low-fat mayonnaise
1 c. bread crumbs
1/2 c. grated Parmesan cheese

Preheat oven to 325 degrees. Spray rack of roasting pan with non- stick cooking spray. In a small bowl mix mustard and mayonnaise. On a paper plate mix crumbs and cheese. Lightly coat each breast with mustard-mayo mixture, then roll in crumbs and cheese. Put on single layer on roasting pan. Bake 1 hour and 20 minutes or until chicken is tender. (Do NOT turn chicken.) 4 to 6 servings.
