RED VELVET CAKE 
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/2 cups all-purpose flour
1 tbsp. cocoa
1/2 tsp. salt
1 cup buttermilk
2 oz. red food coloring
1 tbsp. vanilla
1 tsp. baking soda
1 tbsp. vinegar

Cream together shortening and sugar. Add eggs. Sift flour, cocoa and salt. Add remaining ingredients and mix well.

Bake at 350°F for 30 to 35 minutes or until a cake tester comes out clean.
