BROCCOLI-BLUE CHEESE BAKE 
2 (10 oz.) pkgs. frozen chopped broccoli
2 tbsp. butter
2 tbsp. flour
1 (3 oz.) pkg. cream cheese, softened
2 tbsp. crumbled blue cheese
1 c. milk
1/2 c. crushed Ritz crackers
2 tbsp. butter, melted

Cook broccoli. Drain well. In saucepan, melt 2 tablespoons butter; stir in flour. Stir in cream and blue cheeses. Add milk, cook and stir until bubbly. Stir in broccoli. Pour in casserole. Cover. (May refrigerate up to 24 hours.)

Toss crushed crackers with 2 tablespoons melted butter. Wrap and chill. Top casserole with crumbs. Bake, uncovered, at 350 degrees 45 minutes. Uncover, bake 5-10 minutes more. 4-5 servings.
