MAPLE OATMEAL BREAD | |
3/4 c. boiling water 1 c. hot coffee, instant or perked 1 c. rolled oats, quick 1/3 c. butter 1/2 c. maple syrup (can substitute honey or Log Cabin) 5 1/2 c. sifted flour 1/2 c. sugar 2 tsp. salt 2 pkg. dry yeast 1/4 c. lukewarm water 2 eggs, unbeaten Combine hot water, coffee, rolled oats, butter, syrup, sugar, and salt. Let cool until lukewarm. Dissolve yeast in 1/4 cup lukewarm water and add to first mixture. Blend in eggs. Gradually add flour to make stiff dough and knead. Place in greased bowl, cover and let rise 1 hour. Knead very little and divide into 2 loaves. Place in greased pans. Let rise 1 hour. Bake at 350 degrees approximately 50 minutes. Excellent toasted. |
