TURKEY VERDE | |
1 lb. turkey cutlets 1/2 c. plus 2 tbsp. Filippo Berio olive oil 1/4 tsp. black pepper Juice of 1 lemon 2 cloves of garlic 3 c. chopped fresh basil, parsley or a combination 3 tbsp. grated Parmesan cheese 2 tbsp. pine nuts Preheat oven to 350 degrees. Rub turkey with 2 tablespoons olive oil and sprinkle with black pepper. Place turkey in baking dish. Cover and bake for 45 minutes or until lightly browned. While turkey is cooking combine lemon juice, remaining olive oil, garlic, basil or parsley, and cheese in an electric blender and blend until smooth. Serve turkey covered with green sauce and sprinkled with pine nuts. |
