BLUEBERRY NUT BREAD | |
2 1/2 c. flour 3/4 c. sugar 1 tbsp. baking powder 1/2 tsp salt 6 tbsp. butter 3/4 c. chopped walnuts 2 eggs 1 c. milk 1 tsp. vanilla 1 1/2 c. blueberries Preheat oven to 350 degrees. Grease and flour 9 x 5 inch loaf pan. In large bowl, with fork, mix flour, sugar, baking powder and salt with pastry blender, cut in butter until mixture resembles fine crumbs. Stir in walnuts. In small bowl, with fork, beat eggs slightly. Stir in milk and vanilla. Stir egg mixture into flour mixture just until flour is moistened. Gently stir blueberries into batter, spoon evenly into pan. Bake 1 hour and 20 minutes or until toothpick inserted in center comes out clean. Cool bread in pan on wire rack 10 minutes. Remove from pan and cool. Keeps better in refrigerator. |
