ZUCCHINI RELISH 
16 c. unpeeled green and yellow zucchini
4 c. chopped onions
2 c. chopped green peppers
1 c. chopped red peppers
1 lg. head cabbage (chopped)
2 tbsp. coarse salt

Mix all together and let stand for 2 hours, then drain.

Mix: 4 c. apple vinegar 2 tsp. celery seed 2 tsp. mustard seed 1/2 tsp. mace 1/2 tsp. turmeric

Bring to a boil. Add vegetables and bring to a boil again. Seal in glass jars.
