BEEF CORDON BLEU 
2 (6 oz.) fillets, cut to 1 inch thickness
6 oz. butter
4 oz. mushrooms, sauteed
2 slices ham
2 slices Swiss cheese
2 oz. Bearnaise Sauce

Saute fillets in butter to preferred doneness. Top with mushrooms and Bearnaise Sauce. Add ham and broil for about 2 minutes. Add cheese and broil until cheese melts. Serves 2.
