MARINATED BRISKET 
MARINATED SEASONING:

Liquid smoke
2 tbsp. soy sauce
Garlic salt
Onion salt
Celery salt
Lea & Perrin

SAUCE:

1/2 c. vinegar
1/2 c. sugar
1 c. catsup
1 tsp. mustard (dry)
1 tsp. onion
2 tsp. Lea & Perrin
Dash soy sauce

Rub seasoning on brisket of about 3 to 4 pounds. Make sure you rub both sides. Wrap in foil and let stand overnight. Put rack in roaster. Place over water in pan and cook about 300 degrees for about 3 to 3 1/2 hours. After meat is tender, open foil and get several tablespoons of juice from brisket and mix with sauce. Pour over the roast and cook for about 30 more minutes at 250 degrees. When serving meat, heat the sauce and put on table so that can be based while eating.
