LENTILS WITH FRANKS | |
1 c. uncooked lentils 4 slices bacon, cut into 1 inch pieces 1 med. onion, chopped 2 c. water 1 can (8 oz.) tomato sauce 3 tbsp. brown sugar 1 tsp. salt 1/2 tsp. dry mustard 1/8 tsp. black pepper 8 hot dogs, cut 1 inch pieces Place lentils in colander and rinse under cold running water, drain. In 10 inch skillet over medium heat, cook bacon until crisp. Add onion and cook until golden. Add lentils, water, tomato sauce, brown sugar, salt, dry mustard and pepper. Heat to boiling. Reduce heat, cover and simmer for 35 to 40 minute. Add franks, cover and simmer 15 more minutes. Makes 4 servings. About 650 calories per serving. |
