OLD FASHION BUTTERMILK PIE 
1 (9 inch) pie crust
1 egg white, slightly beaten
1/2 c. butter (softened)
2 c. sugar
3 eggs (beaten)
1/4 c. all purpose flour
1/4 tsp. salt
1 c. buttermilk
1 tsp. vanilla
1/8 tsp. almond extract (optional)
1/2 to 3/4 c. chopped nuts (your choice)

Prebake pie crust in 450 degree oven for 10 to 12 minutes. Remove and set aside. Reduce heat to 300 degrees. Brush pie shell with egg white and allow to dry. In large mixer bowl; cream butter, add sugar, 1/2 cup at a time, creaming well.

Beat in eggs. Gradually blend in flour and salt. Stir in buttermilk, vanilla and almond flavoring. Sprinkle nuts in bottom of pie shell and pour in filling. Bake for 1 1/4 to 1 1/2 hours or until knife inserted near center comes out clean. Cool.
