FESTIVE CRANBERRY SALAD | |
1 (12 oz.) pkg. cranberries, ground 1 c. chopped apple 1 c. sugar 1 c. hot water 1 (15 oz.) can pineapple tidbits 2 tbsp. concentrated frozen orange juice 2 pkg. Knox gelatin 1 c. chopped celery Combine and set aside cranberries, apple, and sugar. Dissolve Knox gelatin in hot water. Add syrup drained from pineapple and orange juice. Chill until partially set. Add cranberry mixture, pineapple, and celery. Put in mold and chill until firm. Unmold and garnish with mayonnaise and green olives. May set in a pretty glass dish. OPTIONAL: Add chopped pecans, grapes, mandarin oranges with cranberry mixture. HINT: Cranberries grind better if frozen. |
