SPUD-NUT DOUGHNUTS 
2 c. milk
1/2 c. shortening
1 c. sugar
1 1/2 tsp. salt
1 c. mashed potatoes
1 1/2 pkg. yeast
1/4 c. warm water
3 eggs
8 c. flour
1 tsp. vanilla

Heat milk; pour over shortening, sugar, and salt. Mix in mashed potatoes, vanilla, and eggs slightly beaten. Add yeast, which is dissolved in warm water. Stir in flour. Work until smooth. Roll 1/4 inch; let rise until double. Cut and fry in deep oil.

GLAZE:

1 1/2 c. powdered sugar
1/4 c. boiling water
Little vanilla
