CREAMED PEAS 
1 can sm. green peas
1/2 stick butter
1 egg yolk
1 tbsp. sugar
1/2 tbsp. cornstarch
3/4 c. milk

(You may also use peas and carrots or peas and pearl onions.) Place peas into a saucepan with original juice. Add 1/2 stick of butter, using a low flame. Separate egg yolk from the white; mix egg yolk, cornstarch, milk and sugar. Beat mixture until fluffy. Bring peas to a boil. Add mixture, then let simmer until sauce is of thick consistency. Do not overcook.
