TENDER CHICKEN 
Wonderful for company - great to do ahead, very rich.

3 whole boneless chicken breasts
4 eggs, beaten and salted
1 c. fine plain bread crumbs
1 lb. fresh mushrooms
3 (1 oz.) wedges, Swiss Knight Greyre cheese
2 sticks butter
1/2 c. oil
1 can chicken broth

Cut chicken into 1 inch strips and marinate in egg and salt at least 1 hour to overnight. Roll in bread crumbs and brown in butter oil mixture. Cut into bite size pieces and set aside.

Slice mushrooms and saute with a little or desired garlic and onion.

In large casserole layer chicken, mushrooms and grated Greyre cheese and repeat. Refrigerate - when ready to serve, heat broth, pour over casserole and bake at 350 degrees for 30 minutes. This will sit in the oven on warm for awhile.
