TWICE BAKED POTATOES 
8 baking potatoes, washed and dried
1 1/2 c. sour cream
1/4 c. milk
3/4 c. shredded cheddar cheese
1 1/2 sticks butter
1 tsp. salt
Dash of pepper
1 tsp. chives
10 slices bacon, crisp and crumbled

Bake potatoes 3/4 hour at 400 degrees and cool. Cut thin slice from top of each and scoop insides out. Mash until there are no lumps. Add rest of ingredients (except bacon) and beat until fluffy (can use electric mixer).

Stuff mixture into potato shells and sprinkle with crumbled bacon. Place on cookie sheet and refrigerate. Take out of refrigerator 1 hour before baking. Bake at 350 degrees for 20 minutes. Serves 8.
