SHRIMP ELEGANTE 
2 tbsp. minced onion (I use scallions and cut the green tops fine to sprinkle on top when ready to serve)
2 tbsp. butter
1 lb. deveined shrimp (not cooked)
1 tsp. salt
Dash pepper
1/4 lb. sliced mushrooms
1 2/3 c. water
1 c. sour cream
1 tbsp. flour
3 tbsp. chili sauce
1 1/3 c. minute rice

Saute the onions in butter until golden. Add shrimp and mushrooms and saute until shrimp are pink. Combine salt, pepper, chili sauce and water. Add to shrimp mixture. Bring to a boil. Stir in minute rice (uncooked). Cover and simmer for five minutes. Combine sour cream and flour and add to the mixture. Heat gently. Serve with green onions sprinkled on top.
