SUNSHINE CARROTS 
3 c. sliced carrots
1/4 c. water
1 tbsp. brown sugar
2 1/2 tsp. corn starch
2/3 c. orange juice
1 tbsp. butter, melted
1/4 tsp. salt
1/8 tsp. ground ginger
1/8 tsp. ground cloves
Parsley

Place sliced carrots and 1/4 cup water in a 1 1/2 quart casserole. Microwave at high 9 to 10 minutes until carrots are tender. Stir once after 5 minutes. Combine brown sugar and corn starch.

Blend in orange juice, butter, salt, ginger and cloves. Stir mixture into carrots. Microwave at high, uncovered, 2 minutes. Stir. Microwave at high, 1 1/2 minutes more. Garnish with parsley. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
