MEXICAN CHICKEN 
Chicken, cut up (can use 2)
1 can chicken soup
1 can mushroom soup
1 can Rotel tomatoes
1 lg. chopped onion
1 sm. can mushrooms
1 tsp. chili powder (I use 1 tbsp.)
Tortilla chips
Cheese

Layer of chicken in large pan, layer of tortilla chips, layer of grated cheese, layer of mixture. Cook covered 1 1/2 hours at 400 degrees. Take cover off last 15 minutes and top with more grated cheese.

Can substitute ground meat and omit chicken soup. Microwave on HIGH for about 10 minutes; put cheese on top and microwave until cheese melts (15 seconds).

Since microwave ovens vary in power, you may need to adjust your cooking time.
