HAM STUFFED ACORN SQUASH | |
2 acorn squash, halved and seeded 1/4 c. chopped celery 2 tbsp. chopped onion 2 tbsp. chopped green pepper 4 tbsp. butter 1 c. finely chopped cooked ham 1/2 tsp. salt 1 1/2 c. soft bread crumbs 2 tbsp. melted butter Place squash, cut side down, in shallow baking pan. Bake at 350 degrees for 45 to 50 minutes, or until done. Cook celery, onion, and green pepper in the 4 tablespoons butter just until tender. Scoop out pulp of squash; mash. Fold in cooked vegetables, ham, salt and 3/4 cup of crumbs. Return mixture to shells. Combine remaining crumbs and 2 tablespoons butter; sprinkle over squash. Bake 10 minutes more. |
