AUNT GERT'S CHOCOLATE MATZO
TORTE
 
3 1/2 oz. bitter sweet chocolate bits
1/4 lb. butter
1 c. sugar (fine sugar if possible)
3 eggs, separated
8 whole egg matzos
1/2 c. walnuts, chopped
Sweet wine

Melt chocolate bits and allow to cool. Cream butter with sugar until smooth. Add egg yolks, one at a time and beat well. Beat egg whites until stiff. Fold chocolate into egg yolk mixture and then fold in egg whites, beaten. Dip egg matzos in wine one at a time until moistened not soaked - both sides. Put matzo on plate and cover with 2 tablespoons of filling. Continue until 8 matzos are covered with chocolate mixture. Then cover top and sides with remaining chocolate mixture. Sprinkle chopped nuts on top. Cover dish with plastic wrap and refrigerate for 24 hours. And you thought 7 Layer Cake was good! ! !
