SHRIMP TOAST 
1 1/2 lbs. shrimp
1 sm. onion
2 slices ginger
12 slices old bread
1/4 tsp. sugar
1 egg
1/2 tsp. salt
1 tbsp. cornstarch
2 tsp. sherry
3 tbsp. water
Dash pepper
2 c. vegetable oil

Wash, clean and chop shrimp finely. Chop onion and ginger very fine. Combine all ingredients and mix thoroughly. Spread on old bread. Heat oil for deep frying. Deep fry bread on shrimp side for 2 minutes. Turn and brown other side, place on paper towel after removing from oil; drain. Cut into 4 pieces.
