SHRIMP TOAST 
1 lb. raw shrimp, peeled and deveined
1/2 c. chopped scallions
1 c. chopped water chestnuts, drained

PASTE:

1 egg
2 tsp. salt
1/2 tsp. MSG
1 tsp. sugar1 tbsp. cornstarch
10 slices white bread, crusts removed
Oil for frying

Chop shrimp, scallions and water chestnuts. Make paste; combine with shrimp mixture. Flatten bread with rolling pin. Cut each slice into quarters. Place 1 tsp. shrimp mixture on each quarter. Heat oil in electric skillet; place bread, shrimp side down, (won't fall off). Fry until brown; turn to brown other side. Drain on paper toweling. Make ahead, freeze and reheat at 375 degree oven for 15 to 20 minutes. Serve with sweet and sour sauce if desired. Makes 40 pieces.
