BLACKEYED PEAS 
2 c. dried blackeyed peas
Water
2 tbsp. parsley, dried
1 to 2 cloves minced garlic
1/2 med. onion, chopped
1/4 tsp. cumin
1/4 tsp. chile powder
1/2 tbsp. oregano, dried
1/8 tsp. cayenne pepper
1/4 tsp. salt free all purpose seasoning

Soak peas at least 3 hour or overnight. Drain. Place in 4 quart pan. Add all remaining ingredients and cover with water. cook over medium high heat until peas are tender. Watch during cooking and add water as needed. Salt and pepper to taste. Serves 4 to 6 people.
