ZUCCHINI COOKIES 
1 c. shortening
1 1/2 c. brown sugar
2 eggs
2/3 c. shredded zucchini
2 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. each cinnamon, ginger, nutmeg
2 c. uncooked oatmeal
1 c. chopped nuts
1/2 tsp. vanilla

Cream shortening and brown sugar. Add eggs, beat until fluffy. Stir in zucchini. Sift dry ingredients together and add to creamed mixture. Stir in oatmeal, nuts and flavoring. Drop by spoonful onto greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. 6 dozen.
