MUSSELS MONTEREY 
4 tbsp. butter
2 tbsp. flour
1 c. light cream
1 tsp. Worcestershire sauce
1/3 tsp. fresh ground pepper
1 lb. cleaned mussels
1/2 c. grated Monterey Jack cheese
1/2 c. seasoned bread crumbs

Melt 2 tablespoons butter in a saucepan and whisk in the flour. Cook 2-3 minutes, stirring, over medium heat. Remove from heat and vigorously stir in the cream, whisking until smooth. Stir in Worcestershire, pepper, and mussels, and pour the mixture into a 1-quart casserole dish. Top with the cheese and sprinkle with the bread crumbs.

Melt the remaining butter and pour over the top. Bake in a prheeated 375 degree oven for 12-15 minutes, then place under the broiler just to brown the top. Serves 2-4.
