QUICHE LORRAINE 
9 inch pastry shell
4-6 strips bacon
1 onion, thinly sliced
1 c. Swiss or Gruyere cheese, cubed
1/4 c. grated Parmesan cheese
2 eggs, lightly beaten
1 c. half & half or milk
1/2 tsp. salt
1/2 tsp. pepper

Preheat oven to 450 degrees. Bake pie shell 5 minutes. Cook bacon in pan; remove. Pour most of fat out. Saute onion in remaining fat. Crumble bacon. Sprinkle bacon and onion in pie shell. Then add cheeses.

Combine eggs and remaining ingredients. Pour carefully into pie shell. Bake 15 minutes at 450 degrees. Reduce heat to 350 degrees. Cook until knife inserted is free from cheese, (Knife will be moist.), approximately 30-45 minutes. Serve with white wine, French bread and salad.
