EGGPLANT AND SQUASH CASSEROLE 
1 lg. eggplant
2 zucchini squash
1 lb. Cheddar cheese (grated)
3 eggs
1 c. cracker crumbs, crushed
1 onion, minced
Salt and pepper

Cook peeled eggplant and chop into pieces. Also cube squash and cook together until tender (drain). Put in large bowl. Add eggs beaten, cracker crumbs, onion, salt and pepper.

Bake at 350 degrees in a greased baking dish for 1 hour covered. After 1 hour sprinkle cheese on top and put back in oven until melted. Very good.
