STUFFED BREAST OF VEAL 
1 breast of veal, about 3 lbs.
Olive oil
1 c. ricotta cheese
1 egg, slightly beaten
1 (10 oz.) pkg. chopped spinach, thawed & drained
1 onion, chopped
1/4 tsp. nutmeg
Salt & pepper to taste

Preheat oven to 350 degrees. Make a split (pocket) in the veal. Lightly coat the veal with olive oil. Combine cheese, egg, spinach, onion and spices and stuff into veal pocket. Place in roasting pan and bake for about 1 1/2 hours (30 minutes per pound). This stuffing may be replaced with your favorite stuffing.

Serves 4.
