STUFFED MANICOTTI 
1 lb. pork sausage
1/2 tsp. salt
1 (27 1/2 oz.) can spaghetti sauce
1 (6 oz.) can tomato paste
2 1/2 tbsp. brown sugar
8 oz. manicotti
1 egg
15 oz. Ricotta cheese
1 tsp. parsley flakes
3 c. shredded Mozzarella cheese
Parmesan cheese

Preheat oven to 350 degrees. Brown sausage, drain and add salt. Combine spaghetti sauce, tomato paste, brown sugar and half of the sausage. Cook 15 minutes. Boil manicotti. Combine egg, Ricotta cheese, 2 cups of the Mozzarella cheese, parsley and the remaining sausage. Stuff manicotti with Ricotta cheese mixture. Pour 1/3 sauce into casserole dish; place manicotti in a single layer. Cover with remaining sauce. Sprinkle with Parmesan cheese and the remaining cup of Mozzarella cheese. Bake for 35 minutes.
