DATE WALNUT LOAF 
3 packets (3 oz.) instant oat bran
3/4 c. whole wheat flour
3/4 c. all purpose flour
1/2 c. oats
1/2 c. firmly packed brown sugar
1 tbsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
3 egg whites
1 2/3 c. skim milk
1/2 c. vegetable oil
1 1/2 c. chopped pitted dates
1 c. chopped walnuts

In large bowl stir together oat bran, wheat flour, oats, brown sugar, baking powder, cinnamon and salt; set aside. In small bowl combine egg whites, milk and oil; mix well. Add liquid mixture to oat bran mixture, stir until just moistened. Fold in dates and walnuts. Pour batter into a 9"x5"x3" loaf pan coated with Pam. Bake at 350 degrees for about 1 hour. Cool completely before slicing. Approximately 24 servings.
