PECAN OR WALNUT LOAF 
2 tbsp. butter
1 sm. onion chopped
1 c. celery chopped

The finer the onion and celery chopped the better.

Melt butter and steam onion and celery a few minutes.

1 tsp. salt (or less)
3/4 c. milk (soy okay)

1/2 c. chopped pecans or walnuts
1 c. bread crumbs (whole wheat good)
1/4 c. chopped parsley
2 eggs, beaten
1/2 tsp. sage

Mix well, dump into greased loaf pan and bake 45 minutes at 350 degrees.
